The suitable pasteurization conditions for emulsification are: the sterilization time is set to 5min, and the sterilization temperature is 55℃. The emulsification stability was 49.37% when the temperature was 55℃, and the sterilization time was 3.5min. Among the gel properties of whole egg liquid, the suitable sterilization conditions of hardness and viscosity are sterilization time 3.5min, sterilization temperature 52℃. The more suitable elastic sterilization conditions are the temperature of 61℃, sterilization time of 3.5min.
In the actual production, pasteurization as a key link in the processing of liquid egg products in the egg pasteurization tank, reduce the microorganism in the egg liquid, prolong its shelf life. The sterilization conditions have an important effect on the processing characteristics of whole egg liquid. It is suggested that the food production enterprises choose reasonable pasteurization conditions for different processing requirements, and accurately control the sterilization time and temperature.
